New mum tips: Nutritionist Fiona Campbell lets us in on her secrets

Ever wondered how to juggle healthy living with caring for a newborn? It can often seem like a challenging task, to say the least.

So, last week, we sat down with the lovely nutritionist (and long-time advocate of the Nordic diet) Fiona Campbell, who spoke to us candidly about what life’s really like with a three-month-old.

She revealed her healthy living tips for getting back into shape and boosting energy levels, answering the questions all new mums want to know: How do I stop feeling so tired? Is breakfast really the most important meal of the day? How can I up my protein and calcium intake? Are alcohol and caffeine forbidden for breastfeeding mums?

Fiona also let us in on her own delicious recipe for healthy granola, which she enjoys regularly with a few dollops of Ísey Skyr and some fresh berries.

Fiona’s healthy granola recipe


Ingredients
500g whole rolled Scottish porridge oats
150g chopped pecans
150g flaked almonds
100ml maple syrup
20ml rapeseed oil
10ml vanilla essence
20g ground cinnamon


Method
Preheat the oven to 120C. Mix the dry ingredients in a large mixing bowl, add the wet ingredients and stir through. Transfer the mix evenly across 2 large baking trays, place in the oven, and set the timer for 13 minutes.

When the timer sounds, remove the trays, stir the granola and return to the oven for a further 13 minutes (I recommend swapping the positions of the trays to ensure a more even bake). Remove and allow to cool, then transfer to a sealed tub.

Enjoy 5 tablespoons with natural Ísey Skyr and a handful of fresh berries for a healthy and delicious start to your day.
